Homemade Pumpkin Cookies
Ingredients
- 225g of plain flour
- 30g caster sugar
- 30g dark brown sugar
- 1 tablespoon baking powder
- 1 pinch of ground cinnamon
- 150g diced cold butter
- 5 pinches of flax seeds (or any seeds or chopped nuts you like)
- 100g grated pumpkin
- 1 tablespoon honey
- Few chocolate drops and pumpkin seeds for decoration
Step 1 -
Preheat the oven to 170°C.
Step 2 -
Line 2 baking trays with baking parchment paper.
Step 3 -
In a large bowl, combine the flour, sugar, baking powder, salt and cinnamon. Use your fingertips to work in the butter.
Step 4 -
Keep mixing for few minutes, mix in the seeds and honey and then add the grated pumpkin.
Step 5 -
Roll out the cookie dough between 2 baking parchment paper to ½ cm thick.
Step 6 -
Cut your cookies using different shape cutters and decorate with chocolate drops and pumpkin seeds.
Step 7 -
Place on the baking trays and bake for 15 minutes.
Step 8 -
Leave to cool down for 5 to 10 minutes before eating.
