Herbs are among the easiest of things for the first time GIYer to grow and one of the easiest foods to be self sufficient in, even if you don't have much space to grow. 

Join us for a delightful journey into the world of herbs, learning how to grow and cook with them with Richard and Bruno on this one day experience at GROW HQ in Waterford City. 

This course is suitable for all skill levels, whether you're passionate about sustainable living, eager to experiment with new flavours, or simply love spending time outdoors, we promise you a really enjoyable day of learning.  You will learn about growing the annual herbs (like basil, coriander etc) and perennial herbs (like rosemary, thyme, sage and more).

You will spend the morning with Richard learning how to grow, and after a delicious homegrown lunch Bruno will lead a cookery demo showing how to make the best use of your delicious herbs to elevate even the simplest ingredients in to a culinary masterpiece!

What You'll Learn

Morning:​
After you've enjoyed a welcome scone and tea or coffee, you'll explore the lush garden areas of GROW HQ, with Richard, discovering a variety of in-season herbs which thrive in the Irish climate. From aromatic Mediterranean herbs to resilient north European varieties, you'll gain hands-on experience in bed preparation, sowing, planting, and harvesting under the guidance of our head grower, Richard.​

​Afternoon:​
In this herbs cookery masterclass, you'll delve into how to harness the abundance of your garden's by-products to create culinary delights. From transforming surplus herbs into flavourful herb salts, to concocting refreshing herb cordials that tantalise the taste buds, Bruno will guide you through every step of the process. Embrace the ethos of zero waste as you learn to make the most of every ingredient, unlocking new dimensions of flavour and sustainability in your kitchen. ​

By the end of this course, you'll leave with a lots of of newfound skills and confidence. From mastering the art of sowing, growing, and harvesting herbs, to seamlessly incorporating them into your culinary creations, you'll be equipped with the knowledge to elevate your cooking to new heights.

What's Included

Enjoy a delicious plot-to-plate mezze lunch overlooking the HQ Gardens (or in the garden if weather permits) and get the chance to meet and learn from fellow homegrowers. There will be coffee, tea and scones on arrival and a seasonal cordial for an afternoon pick-me-up.

Also included is a copy of Mick Kelly's award-winning book, GROW, COOK, EAT for you to enjoy at home.

About Richard Mee & Bruno Dantes

Richard started growing at only 3 years old with his dad and since then has accumulated over 40 years of growing experience. He studied for a BSc in Horticulture at Reading University and an MSc in Organic Farming at the Scottish Agricultural College. In addition to the UK and Ireland, Richard has grown veg all over the world, including Central America and Africa.

Bruno is an internationally experienced, Spanish-born chef with over 20 years in the culinary industry, working with renowned restaurants and catering services around the world. His expertise lies in creating exceptional Mediterranean cuisine, with a particular passion for steak, seafood, and wholesome, flavourful dishes.

Important Info

Please arrive 10 minutes before the course starts and come dressed appropriately for a day spent outdoors in the garden: sturdy footwear, rain jackets, suncream, etc.

Bookings are non-refundable; however, they may be transferred to another course if requested at least 14 days prior to the event date.
