Stupidly Green Salad With Trio Of Dressings
This dish is 4 in 1. Any salad leaves will work so we recommend going out to the garden and harvesting whatever is ready to eat – you can’t get a salad fresher than that. You also have a choice of 3 dressings, or you can always try all three and store the rest to enjoy throughout the week.
Ingredients
- 200g fresh, homegrown mixed salad leaf
- 75g Sugar snap peas
- 1 apple
- 100g radishes
- 50 ml yoghurt
- 10 mint leaves
- Clove of garlic
- Juice and zest of half a lemon
- 25 ml maple syrup
- 75 ml apple juice
- 75 ml olive oil
- 25 ml apple cider vinegar
- 1 tsp wholegrain mustard
- 15g sugar
- 25g parsley
- 25g lovage
- 75-100ml sunflower oil
- 1 tsp wholegrain mustard
- 1 tbsp white wine vinegar
Step 1 - Salad
Take all the salad greens from the garden and wash. Tear the leaves and put in a bowl. Julienne the apple (cut it into thin, short strips) and shave the radish thinly then mix in the bowl. Serve with your choice of dressings.
Step 2 - Yoghurt & Herb Dressing
Finely chop the mint and crush half a garlic clove. Put the yoghurt into a mixing bowl. Add the mint, garlic, lemon juice, zest and maple juice and mix together. If too thick add some water. Season to taste.
Step 3 - Apple Dressing
Juice the apple. Add the apple juice, sugar and apple cider vinegar to a pot and bring to the boil over a medium heat and reduce until syrup like. Add the olive oil, mustard and watercress together and whisk until complete. Add more apple juice if it is too thick.
Step 4 - Stupidly Green Dressing
Blend the parsley, lovage and half a clove of garlic with the sunflower oil for 7 minutes until completely broken down and green in colour. Whisk in the mustard and vinegar and season to taste.
