2019 winning GROW2CEO Recipe

Got Community School are the winners of this years GROW2CEO. Here is there delicious recipe that WOWed the judges.

Serves 16 people

Prep Time 15 minutes

Ingredients

8 leaves of Coole Wild garlic (or 2-3 cloves of garlic)

6 Fresh Nettle leaves

800g of Spinach

2 medium leeks

2 medium carrots

2 sticks of celery 

3 medium potatoes

2 organic vegetable stock

2 litres of water

2 tbs lemon juice

1 tsp ground nutmeg

1 tin (400g) chickpeas

Almonds & Creme Fraiche to garnish

 

Method

  • Prepare vegetables (Slice leeks, chop carrots, slice celery, peel & chop potatoes)
  • Heat oil in a large pot using moderate heat
  • Add all of the veggies (except spinach)
  • Cook slowly, sweating the veg until soft for 10 minutes, stirring regularly
  • ​Put water to boil in a separate pot with the veg stock and bring to the boil
  • Add the spinach and cook for two minutes until it is wilted
  • Remove the spinach from the pot and put immediately in an ice bath (cold water, pinch of salt and ice)
  • pour the stock onto the vegetables and cook for 15 minutes
  • Taste for seasoning, add salt/ nutmeg
  • Drain the cold, wilted spinach and add with lemon juice, blend until smooth
  • Drain & add the chickpeas
  • Serve with a garnish of creme fraiche/ cream and toasted almonds
